BAHIAN MUQUECA INGREDIENTS:

Bahian Muqueca

Instructions:
Yield: 6 servings
1lb fresh medium-sized prawns, shelled
1lb cod fish, sliced to medium size chunks
6tablespoon olive or vegetable oil
2tablespoon dende oil (West African palm oil)
2  large yellow onion, finely chopped
3  cloves garlic, crushed
2tablespoon fresh lemon juice
4  large tomatoes, peeled, seeded, chopped
3tablespoon chopped cilantro
¼teaspoon black pepper
½teaspoon salt
1  fresh red hot pepper

Heat the vegetables oil in a medium-sized pot and stir-fry the onion until golden brown.

Add the garlic, dende oil, cayenne pepper, cod and prawns. Stir-fry for 3 minutes. Add the salt, lemon juice, tomatoes, and coconut milk.

Simmer for 8-10 minutes.
